What happens when you combine an empty, historic building, a non-profit entity looking to promote area tourism, and a vinegar enthusiast? You guessed it: The International Vinegar Museum.

​In 1999, the non-profit group CARE (Community Advancement for Roslyn and Eden) had just formed in response to the changing demographics and economy of the area. The group's mission is to promote the area and encourage local businesses. While looking for a project to support their mission, Lawrence Diggs, a.k.a. The Vinegar Man, partnered with the group to launch the world's first and only Vinegar Museum located in the historic Roslyn Auditorium on Main Street.


Today we are proud of the fact that we are a self-sustaining entity. We have been blessed with a dedicated group of supporters who have contributed countless hours of volunteer labor and established an endowment fund, Friends of the Museum. And, of course, we'd be nothing if it wasn't for our paid staff who loves to share their enthusiasm of vinegar every day!


So, come on in and learn all you wanted to know about Vinegar. By the end of the day you'll be putting vinegar on your ice cream! No joke. It's a popular treat here in Roslyn!

Our History

One of the first projects of CARE was to promote tourism in hopes of increasing traffic flow to the community. CARE partnered with Lawrence Diggs, aka "The Vinegar Man," to start a vinegar museum. Diggs is the founder of Vinegar Connoisseurs International, a newsletter publication about cooking with and enjoying vinegar, and had published a book about making and appreciating vinegar. He had traveled the world studying vinegar and became our local vinegar expert. CARE and Diggs teamed up with the town of Roslyn to convert the old city auditorium into what is today, The International Vinegar Museum.
